Description:

Dover Sole has always been considered a "luxurious" fish due to its amazing taste, meaty texture and mild/sweet flavor. It can be prepared in several ways of which pan fried, steamed, grilled and quick-braised (Court-Bouillon). Always recommended to be bought skinless.

 

Chef's Tip:

Best served Pan Fried. Cook the fish skinless for about 4-5 minutes and serve with Isigny butter, flat leaf parsley and a squeeze of fresh lemon.
