The cheese is kept for 24 hours in a dry room and is then ripened for 15 days in the cellars. During this time it is given special attention. The delicate flavour echoes the ease of country living in the Loire and Cher valleys.
The rind is dusted with ash and this gives the cheese its unique flavour. It has a distinctive round shape with a dark blue rind in contrast to its pure white melting interior that reveals a soft nutty flavour on the palate.
