Corn-Fed whole chicken raised in Normandy Region of France. The slow-growing corn-fed gives the chicken the best flavor and its golden yellow skin. This chicken can be prepared poached, roasted, grilled or braised (en cocotte).
Stuff the chicken with mushroom, thyme, shallots, garlic and rosemary. Then braise the chicken in a cocotte pan for 45-60 minutes at 220 degree Celsius. You know the chicken is cooked when you do not see any blood around the joint of the leg. Serve with green beans and baby carrots.
